6 c. finely chopped zucchini4 c. chopped, peeled apples2 c. finely chopped onions1 c. chopped pitted prunes1/2 c. chopped candied ginger1 can crushed pineapple, drained3 c. brown sugar1-1 1/2 c. cider vinegar1 tbsp. cinnamon2 tsp. allspice2 tsp. salt (optional)1 tsp. ground cloves1 tsp. mustard seeds1/2 tsp. cayenne pepper
In pot, combine all the above ingredients. Bring to boil, lower heat and simmer for 1 1/2 to 2 hours. Mixture should be thick. Stir often while mixture is cooking. Put mixture in sterilized jars and seal. Makes about 5 jars.
