Yeast Cornbread


1 cup corn meal

1 cup flour

3 tablespoons sugar

1 teaspoon salt

1/3 cup shortening

1 package yeast, dissolved in 1/2 cup warm water

1 egg, beaten

1/2 cup canned milk (I have used regular)


Mix dry ingredients. Cut shortening into dry ingredients. Add egg, milk and yeast mixture. Stir. Pour into greased pan. Let rise until double. Bake at 400 degrees fo r20-25 mintues until tests done. Serve slathered with butter.

Makes one 8″ pan, double for 9×13″ pan
