Winter Tomato Soup

Ingredients

  • 1/2 c chopped celery
  • 2 T butter or bacon drippings
  • 1 can (1 lb) stewed tomatoes
  • 1 can (10 oz) chicken broth
  • 1/2 c dry white wine or 1/2 c additional broth
  • 3 T chopped green onions
  • 1 T lemon juice
  • 1 T cornstarch, blended with 1/2 c water
  • dash curry powder
  • cheese croutons (optional)
  1. Sauté celery in butter or drippings until soft, about 5 mins. Add tomatoes, broth, wine, onion, lemon juice and cornstarch mixture; blend well. Add cury powder to taste
  2. Simmer 15-20 mins, stirring occasionally
  3. Garnish with cheese croutons
