Whole Wheat Sesame Parmesan Loaf

Makes 2 loaves

Dough

3 cups whole wheat flour

2 to 2- 1 / 2 cups all-purpose flour

3 tablespoons sugar

2 envelopes FLEISCHMANN’S RapidRise Yeast

2 teaspoons salt

2 cups water

1 / 2 cup butter or margarine

 

Parmesan and Sesame Seed Filling

1 / 2 cup grated Parmesan cheese

1 / 2 cup sesame seed

1 / 4 teaspoon garlic powder

 

Egg Glaze

1 egg white

1 tablespoon water

Directions
In a large bowl, combine whole wheat flour, 1 cup all-purpose flour, sugar, undissolved yeast, and salt. Heat water and butter until very warm (120o to130oF). Gradually add to flour mixture. Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Stir in enough remaining flour to make a soft dough. Knead on lightly floured surface until smooth and elastic, about 8 to 10 minutes. Cover; let rest 10 minutes.

Divide dough in half; roll each half to 18 x 9-inch rectangle. Sprinkle each rectangle with Parmesan and Sesame Seed Filling. Beginning from long end, roll up tightly as for jelly roll. Pinch ends and seams to seal. Place, seam sides down on greased baking sheets, curving to form a half circle. Cover; let rise in warm, draft-free place until doubled in size, about 1 hour.
With sharp knife, make several cuts on top of each loaf. Combine egg and water; brush on loaves. Sprinkle with sesame seed. Bake at 400oF for 20 to 25 minutes or until done.

Parmesan and Sesame Seed Filling
In a small bowl, combine Parmesan cheese, sesame seed, and garlic powder. Stir to blend.
