Whole Grain Fruit Cobbler
4 cups sliced peeled apples or pears
1/4 to 1/2 cup sugar
2 teaspoons lemon juice
2 teaspoons cornstarch
3/4 cup Whole Grain Baking Mix (see recipe)
1 beaten egg
For filling, in a large saucepan combine apples, sugar, lemon juice, and 2 tablespoons water. Cook and stir till boiling. Reduce heat. Cover and simmer for 5 minutes or till fruit is almost tender, stirring occasionally. In a small bowl, stir together cornstarch and 4 teaspoons water; add to filling. Cook and stir till thickened and bubbly. Reduce heat to keep warm.
For topper, place Whole Grain Baking Mix in a mixing bowl. Combine egg and 2 tablespoons water; add to mix. Stir just till moistened. Pour hot filling into an ungreased 1 1/2-quart casserole. Immediately spoon topping into 4 to 6 mounds on top of hot filling.
Bake in a 400° oven for 18 to 20 minutes or till a toothpick inserted into topping comes out clean. Serve warm. Makes 4 to 6 servings.
