White Fruit Cake
Ingredients
3/4 cup butter
1 1/2 cups sugar
3 eggs, separated
2 1/2 cups flour
2 teaspoons Clabber Girl Baking Powder
1/2 cup milk (or 1/4 cup brandy)
1 pound raisins
1 pound currants
1 cup mixed candied peel
1/3 teaspoon grated nutmeg
Instructions
Beat the butter and sugar until creamy; add beaten egg yolks and milk. In a separate bowl, sift together flour, baking powder and nutmeg. Dredge fruit in this mixture until it is well coated. Add the creamed mixture and mix well. Lastly fold in stiffly beaten egg whites.
Preheat oven to 350 degrees F.
Pour batter into a greased and floured 9x5x3 – inch loaf pan.
Bake for 45 minutes.
