The watermelon adds a colorful twist to an already light and refreshing summertime classic.
4 cups watermelon chunks
¾ cup fresh squeezed lemon juice
¼ cup sugar or to taste
In a blender or food processor puree the watermelon. Pour through a fine sieve set over a large measuring cup, and discard the solids. There should be about 2 cups watermelon juice. Stir in the lemon juice and sugar to taste.
Chill, covered and serve over ice.
Makes about 3 cups
