Veggie Rice Soup for Two

Ingredients

  • 1 c water
  • 1/2 c sliced carrots
  • 1/2 c sliced celery
  • 2 T chopped onion
  • 2 T rice
  • 1/4 tsp salt
  • dash pepper
  • 1 (3-oz) pkg. cream cheese, cubed
  1. Combine water, rice, vegetables, salt, and pepper. Bring to a boil and cover. Simmer 15 minutes or until vegetables are tender.
  2. Add cubed cream cheese and stir until melted.
