Veggie Burger Stew

Ingredients

  • 2 c cubed potatoes
  • 2 small turnips, peeled and cubed
  • 1/2 medium rutabaga, peeled ad cubed
  • 1 c celery sliced
  • 1 c carrots, sliced
  • 1/2 c flour
  • 2 c beef broth
  • 2 small onions, cut into fourths
  • 1 (16 oz) can whole tomatoes
  • 1/4 tsp thyme
  • 1/4 tsp marjoram
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 bay leaf
  • 4 frozen vegetable burgers, thawed ad cut into 1″ pieces
  1. Mix potatoes, turnips, rutabaga, celery and carrots in oven proof Dutch oven.
  2. Mix flour and broth until smooth. Stir broth mixture and remaining ingredients except burger pieces into vegetable mixture, breaking up tomatoes. Heat to boiling.
  3. Stir in burger pieces. Cover and bake 50-60 minutes stirring occasionally, until vegetables are tender.
  4. Remove bay leaf
