Vegetable Soup


  • 1 pound ground round or lean ground beef
  • 1 cup chopped onion
  • Salt and Pepper
  • 1 can whole tomatoes
  • 1 (10-ounce) package frozen mixed vegetables
  • 2 beef bouillon cubes
  • 1 cup macaroni
  1. Add one large chopped onion to the ground beef. Saute beef and onion in large pot until meat is brown. Add one can of whole tomatoes and one can of water. Add frozen vegetables and 2 beef bouillon cubes. Simmer for about 30 minutes.. Add salt and pepper to taste
  2. Cook one cup of elbow macaroni in hot water until tender then blanch in cold water. This keeps it firm and nice in the soup even if you freeze and store the soup later
  3. Add the cooked and blanched macaroni to the soup and cook about three minutes longer
