Vegetable Soup (Civil War)
- small soup bone
- 2 lbs. stewing beef
- 2 qts. water
- 2 Cups chopped tomatoes
- 1 Cup chopped onion
- 1 Cup diced celery
- 1 Cup diced potatoes
- 1 Cup diced carrots
- 1 Cup chopped cabbage
- salt and pepper
- Place soup bone and beef in 2 qts. of water and cook for 2 hours. Remove fat. Add tomatoes, onions and celery, potates, carrots and cabbage
- Cook until vegetables are tender
- Add salt and pepper to taste
