Vegetable Chile Cheese Soup


  • 6 potatoes (peel, cubed)
  • 1 bunch long green onions chopped fine
  • 4 cloves garlic chopped
  • 1 large yellow onion chopped
  • 5 tomatoes quartered
  • 10 anahiem long green chiles, roast, peel and remove seeds, tear into long strips
  • 4 yellow chiles prepare same as above
  1. Saute till onion is glazed and soft, then put this in a pot with 8 quarts of boiling water boiling
  2. Add potatoes and salt and pepper, a can of tomato sauce (optional)
  3. Let cook 30 minutes at a soft boil, serve in bowl and add several cubed pieces of white cheese, like montery jack or mozzerella (do not use yellow cheese) Serve with warm corn tortillas
