Vegetable-Beef Minestrone Soup

Ingredients

  • 1 lb. lean ground beef
  • 1 onion, chopped
  • 1 small zucchini or yellow squash, cubed
  • 1 cup shredded carrots
  • 28 oz. can crushed tomatoes, undrained (use Italian style tomatoes if you can find them)
  • 28 oz. beef broth
  • 15 1/2 oz can canellini beans
  1. In a soup pot, brown the ground beef until cooked throughout. Add onion, squash and carrots; cover and cook on low for 4 minutes. Add tomatoes, broth and beans; simmer, uncovered, for 20 minutes.
  2. Salt and pepper to taste
