Under The Influence Trustee Salad Quesadilla



  • 2 avocados
  • 12 slices (4x4x1/4 inch) Fresh Mexican Cheese (queso fresco) or farmers cheese
  • 6 Chipotle chilies, slivered
  • 1 lime
  • 2 Tbsp. Under The Influence Tomatillo Sauce
  • 12 slices of ham
  • 24 flour tortillas
  • 6 dried Arbol chilies, seeded and ground into powder
  • salt to taste

Peel and smash avocado and add lime juice to prevent discoloration. Salt to taste. Set aside. Place slice of ham and cheese and a few slivers of Chipotle on a tortilla. Cover with another tortilla. Heat on both sides on a comal or griddle over low heat until cheese melts. Cut into quarters. Place a spoonful of avocado topping on each section. Drizzle with Under The Influence Tomatillo Sauce and top with powdered Arbol chili. Serves: 48 Appetizers.
