Under The Influence Alimony In Green Sauce



  • 2 cloves garlic
  • 1 tsp. vegetable oil
  • 3 – 10 Serrano chilies, roasted, de-veined, seeded and cut in strips
  • 1/2 tsp. cumin
  • 1 onion, sliced
  • 1 lb. white button mushrooms
  • 8 fresh tomatillos
  • 4 TBS Under the Influence Tomatillo Sauce
  • salt to taste

Mince one clove garlic. Cook the onion and minced garlic in oil until onion is transparent. Add the mushroom and chilies, stirring well. Continue to cook until chilies are just slightly browned and mushrooms are golden. Halve the tomatillos, then liquefy them in a blender with the remaining garlic clove, Under the Influence Tomatillo Sauce, cumin and salt to taste. Add this to the mushrooms and cook over low heat for 20 minutes, allowing the mushrooms to absorb the flavors and seasonings.
