Tuscan Soup

Ingredients

  • 1 small onion, chopped
  • 1 small carrot, sliced
  • 1 Tablespoon olive or vegetable oil
  • 2 cans (14 1/2-oz each) chicken broth
  • 1 Cup water
  • 3/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 can (15 to 16 oz.) white kidney or great northern beans, rinsed and drained
  • 2/3 cup uncooked small spiral pasta
  • 3 cups thinly sliced fresh spinach (Optional)
  1. In 2 qt. saucepan over med.-high heat, sauté onion & carrot in oil till onion is lightly brown. Add broth, water, salt & pepper, bring to boil.
  2. Stir in beans and pasta, return to a boil. Reduce heat; cover & simmer for 15 minutes or till pasta & vegetables are tender, stirring occasionally,
  3. Add spinach, heat through (if desired)
