Turkish Lentil Soup

Ingredients

  • 1 cup dried lentils
  • 3 cups beef stock
  • 2 Tbsp. chopped fresh parsley
  • 3 Tbsp. butter
  • 1 large onion, finely chopped
  • 3 cups tomato juice
  • Dash of red pepper
  1. Combine lentils, stock and parsley in medium saucepan. Cover and cook until lentils are tender. Stir occasionally.
  2. Melt butter in large saucepan over medium heat. Add onion and sauté until golden. Stir in lentils and stock, tomato juice and red pepper.
  3. Cover and simmer 30 minutes
