Turkey and Wild Rice Soup

Ingredients

  • 1/2 cup Butter
  • 1 cup Flour
  • 2 cups Chicken Broth
  • 2 cups Half and Half
  • 1 1/2 cups cooked Wild Rice
  • 2 cups cubed Turkey
  • 3 cups sautéed or boiled vegetables, whatever is leftover from Thanksgiving
  • Salt and pepper
  1. Melt butter in saucepan. Add flour to make roux with a wire whip.
  2. Slowly add broth and cream. Keep sauce warm and thick.
  3. Add turkey, rice and vegetables. Season to taste. If too thick add more broth or half and half.
