Turkey Wild Rice Soup

Ingredients

  • 1 onion, chopped
  • 2 carrots, shredded
  • 1/2 C. butter
  • 1/2 C. flour
  • 4 C. chicken or turkey broth
  • 2 C. cooked wild rice
  • 2 C. light cream
  • 2 C. cooked diced turkey
  • 1 tsp. dried parsley flakes
  • celery seed to taste
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  1. In a large kettle, sauté onions, and carrots in butter till onion is transparent.
  2. Reduce heat. Blend in flour and cook till bubbly. Gradually add broth, stirring constantly. Bring to a boil and boil 1 minute.
  3. Reduce heat and add wild rice, cream, turkey, parsley, celery seed, salt and pepper.
  4. Simmer for 10 minutes.
