Tropical Fruit Cake Squares
3 cups all-purpose flour
2 cups sugar
1 teaspoon Clabber Girl Baking Powder
1 teaspoon salt
1 teaspoon ground cinnamon
3 eggs, beaten
1 1/2 cups oil
2 teaspoons rum extract
1 (8 oz.) can crushed pineapple, drained
1 cup chopped pecans or walnuts
2 cups diced bananas
In a large bowl thoroughly combine flour, sugar, baking powder, salt and cinnamon. Add eggs and oil; stir until moistened. Stir in Bananas, rum extract, pineapple and pecans. Mix until just combined.
Preheat oven to 350 degrees F.
Spread batter on greased and floured 10x15x1 inch jelly roll pan. Bake for 25 to 30 minutes; cool on wire rack.
May frost with cream cheese frosting, or lightly dust with confectioners’ sugar, if desired.
