Tossed Salad with Cheddar and Grapefruit Dressing
3 tablespoons white wine vinegar
2 tablespoons fresh grapefruit juice
2 teaspoons honey
1/2 teaspoon salt
1/4 cup vegetable oil
6 cups torn, washed lettuce
1/2 cup coarsely grated cheddar cheese
- In a small bowl, whisk together the vinegar, juice, honey and salt until the honey is dissolved. Whisk in the oil and add pepper to taste.
- In a salad bowl, toss the lettuce with just enough dressing to coat the leaves and sprinkle with the cheddar. (The dressing keeps covered in a jar for up to 1 week).
Makes about 1 cup dressing
