Tortellini-Basil Soup

Ingredients

  • 4 c. chicken broth
  • 9 oz. frozen tortellini (cheese or meat)
  • 1 (15 oz. can cannellini beans
  • 1 c. chopped fresh tomato
  • 1/2 c. FRESH Basil, chopped fine
  • 2 T. balsamic vinegar
  • Parmesan to taste
  1. Bring broth to boil, add tortellini and simmer for 6 minutes
  2. Add beans and tomato. Simmer until heated through
  3. Remove from heat. Add basil, vinegar and sprinkle with parmesan cheese
