Tomato-Orange Ginger Soup

Ingredients

  • 1 medium onion, finely chopped
  • 1 clove garlic, finely chopped
  • 2 tablespoons sweet butter
  • Zest of 1/2 orange
  • 3 cups pureed fresh tomatoes or canned
  • 2 1/2 ounces tomato paste
  • 3 cups freshly squeezed orange juice
  • 1/2 teaspoon ground ginger
  • 1 tablespoon finely grated fresh ginger
  • 1/4 teaspoon white pepper
  • 1/4 teaspoon salt
  • 1/2 tablespoon sugar
  • Cayenne to taste
  • 2 ounces brandy, optional
  • 2 lime slices, optional
  • 2 tablespoons sour cream or creme fraiche, optional
  1. In a stockpot, sauté the onion and garlic in the butter over low heat, about 5 minutes, taking care not to brown. Add the zest and stir well. Add the next 9 ingredients, and stir well.
  2. Bring just to a boil, lower the heat and simmer for 15 minutes.
  3. If desired, swirl in some brandy before serving. Garnish with lime and sour cream. Serve hot or allow to cool before serving
