Tomato Bisque Soup

Ingredients

  • 1/2 cup onion
  • 2 stalks celery, chopped
  • 1/2 cup butter
  • 1/4 cup flour
  • 1 qt milk
  • 1-1/2 tsp salt
  • 1 tsp parsley chopped
  • 1 qt stewed tomatoes
  • 1/4 tsp soda
  1. Saute onion & celery in butter for 5 minutes. Add flour & cook 1 minute. Stir in milk, salt & parsley; cook in double boiler for 20 minutes
  2. Cook tomatoes in separate pan and pass through a sieve. Add soda to tomatoes just before combining the two mixtures
  3. Slowly add the hot tomato mixture to milk mixture and serve immediately
