Three Bean Soup

Ingredients

  • 1 onion, chopped
  • 1 T. vegetable oil
  • 2 small potatoes, peeled and cubed
  • 2 carrots, sliced
  • 3 cans chicken broth
  • 3 C. water
  • 2 T. parsley flakes
  • 2 tsp. dried basil
  • 1 tsp. dried oregano
  • 1 garlic clove, minced
  • 1/2 tsp. pepper
  • 1 can (15 1/2 oz.) Great Northern Beans, rinsed and drained
  • 1 can (15 oz.) pinto beans, rinsed and drained
  • 1 can (15 oz.) garbanzo beans, rinsed and drained
  • 3 C. chopped fresh spinach
  1. In a Dutch oven, sauté onion in oil. Add the next nine ingredients
  2. Simmer, uncovered till vegetables are tender
  3. Add beans and spinach and heat through
