Texas Caviar

Ingredients

  • 1 lb black-eyed peas
  • 1/2 cup diced bell pepper
  • 5 oz diced pimentos
  • 1/2 cup diced onions
  • 1/2 cup finely sliced green onions
  • 2 Tsp finely chopped garlic
  • 2 cups bottled Oil & Vinegar dressing
  • 2 each finely chopped jalapeno peppers
  1. Soak peas in water for six hours or over-night (or, probably could use canned equivalent)
  2. Strain water off and boil peas in fresh water until tender
  3. Strain most of the liquid off and add O&V dressing. When peas have cooled, add all other ingredients. Add salt and pepper to taste.
