Texas Beef Stew

Ingredients

  • 1-1/4 lb. beef stew meat, cut into 1 inch pieces
  • 1-2 Tbsp. cooking oil (optional)
  • 1/4 Cup chopped onion
  • 1-1/2 tsp. garlic powder
  • 1/4 tsp. pepper
  • 1 Cup water
  • 1 can (16-oz) tomatoes with liquid, cut up
  • 1 Tbsp. ground cumin
  • 1 tsp. salt
  1. In a large kettle or dutch oven, brown beef, adding oil if desired; drain. Add onion, garlic powder, pepper and water, bring to boil
  2. Reduce heat, cover and simmer for 45 minutes or until meat is almost tender
  3. Add tomatoes, cumin and salt; return to boil. Reduce heat, cover and simmer for 15-20 minutes or until meat is tender to your taste
