Swiss Potato Soup

Ingredients

  • 1 large onion, chopped
  • 3 Tbsp. sweet butter
  • 3 large potatoes, cut up
  • 1 tsp. salt
  • 1/4 tsp. dry mustard
  • 1/8 tsp. white pepper
  • 3 cups water
  • 2 cups milk
  • 8-oz sliced swiss cheese, cut up
  1. Sauté onion in butter until soft. Stir in potatoes, salt, mustard, pepper and water. Heat to a boil, cover. Simmer 30 minutes or until potatoes are tender.
  2. Press through a fine sieve into large bowl, return to soup kettle. Stir in milk, heat slowly just to a boil. Stir in cheese until melted. Ladle into soup bowls
