Swiss Broccoli Soup

Ingredients

  • 5 1/2 c milk
  • 1 1/2 c chopped broccoli
  • 3 T chopped onion
  • 2 T butter
  • 1 T flour
  • 2 c grated Swiss cheese
  • 1/4 t salt
  1. Heat milk until simmering. Add broccoli and onion and cook until tender.
  2. Melt butter in a small saucepan and stir in flour. Add butter flour mixture to milk. Cook stirring for 3 minutes. Remove from heat and add cheese and salt. Stir until cheese melts.
  3. Serve immediately.
