Sweet Potatoes Souffl‚


6 med. cooked sweet potatoes

1/2 stick butter

1 lg. can crushed pineapple

1 c. golden raisins

3/4 c. sugar

Cinnamon to taste

Marshmallows (optional)

1 tsp. vanilla


Combine sweet potatoes, butter, sugar, vanilla and cinnamon. Beat in mixer until smooth. Add crushed pineapple, drained and 1 cup raisins. Place in casserole dish and bake in 350 degree oven until hot and bubbly. Cover with marshmallows, if desired, during last 10 minutes of cooking only. Casserole can be prepared ahead. Serves 8.
