2 large sweet potatoes, peeled and diced

Preheat oven to 200°C. Mix all the ingredients with some olive oil and rub spice mixture into diced tomatoes. Put them in olive oil coated pan, cover with alluminum foil and bake for 40 min. remove the foil and bake for another 25 min. Sprinkle with baked pancetta.
