Sweet Potato Pudding


1 extra lg. can yams, mashed
4 oz. crushed pineapple
1 tbsp. brown sugar
1 egg, beaten
2 tbsp. orange juice


Drain potatoes and mash in large bowl. Add all other ingredients except cornflakes. Mix well. Pour a large amount of cornflakes on piece of waxed paper or foil and fold over to crush with palm of hand. Using a tablespoon, scoop potato mixture and roll in cornflakes. Shape into oval forms and place on greased cookie sheet. Bake at 350 degrees for 20 minutes. May be frozen after baking and reheated. .
