Sweet Potato & Ham Soup

Ingredients

  • 1 Tbsp butter
  • 1 small leek, sliced
  • 1 clove garlic, minced
  • 1/2 lb ham, cut into 1/2 inch cubes
  • 2 medium sweet potatoes, peeled & cut into 3/4 inch cubes
  • 4 cans canned chicken broth
  • 1/2 tsp dried thyme
  • 2 oz fresh spinach, coarsely chopped
  1. Melt butter in large saucepan. Add leek and garlic. Cook and stir till leek is limp. Add ham, sweet potatoes, broth and thyme to saucepan. Bring to a boil over high heat
  2. Reduce heat to medium-low and cook 10 minutes or till sweet potatoes are tender
  3. Stir spinach into soup and simmer, uncovered, 2 minutes or till spinach is wilted
  4. Serve immediately
