Sweet Potatoes

Frying Oil


Peel the sweet potatoes and cut them into very thin slices. Place slices in bowl with ice cold water and leave them to cool 60 minutes. Remove slices from water and place them on paper towels to drain. Pour oil in a deep fryer and heat it. Fry slices of sweet potatoes 2 minutes, or until they are golden brown. Remove slices from oil and place them on paper towels.
