Sweet And Sour Meatballs


1 large green pepper, diced

3 green onions, thinly sliced

1 8-ounce can unsweetened pineapple tidbits, drained (add separately)

1 cup chicken broth or 1 bouillon cube in 1 cup hot water

1-2 tbls soy sauce

3 tbls vinegar

3-4 tbls brown sugar or honey (to taste)

Pinch of salt

2 tbls cornstarch

1/4 cup cold water

2 cups cooked and cubed chicken

3 cups cooked brown rice (1 cup raw)


Saute green pepper, onion, and pineapple tidbits in nonstick fry pan for 3-5 minutes. Add broth, pineapple juice, soy sauce, vinegar and brown sugar or honey. Stir cornstarch into cold water. Add to mixture. Cook and stir gently until thickened. Add chicken and heat through.

Serve over brown rice.
