Super Nachos


  • 1/2 lb each chorizo sausage and lean ground beef (or just 1 lb. ground beef)
  • 1 large onion, chopped
  • salt
  • Tabasco sauce
  • 1 or 2 1-lb. cans refried beans
  • 1 can (4-oz.) green chiles
  • 2-3 cups shredded jack or cheddar cheese
  • 3/4 cup taco sauce or salsa
  • Garnishes
  • 8 cups tortilla pieces or chips
  1. Crumble ground beef and sausage in fry pan
  2. Add onion and cook on high heat, stirring until meat is browned. Drain fat
  3. Season with salt and Tabasco to taste
  4. Spread beans in a shallow lOx15″ oval or rectangular pan or ovenproof dish
  5. Top evenly with meat
  6. Sprinkle w/ cheese and drizzle taco sauce or salsa over top
  7. Cover and chill if made ahead
  8. Bake, uncovered in a 400 oven for 20-25 minutes or until very hot throughout
  9. Remove from oven and quickly garnish
  10. Then, quickly tuck about 8 cups of fried tortilla pieces or tortilla chips just around the edges of bean mixture and serve at once
