Sunshine Carrots

Ingredients

  • 1 Pound baby carrots
  • 1 teaspoon sugar
  • 1 teaspoon cornstarch
  • 1/4 teaspoon ground ginger
  • 1/4 cup orange juice
  • 1 tablespoon butter
  1. Cook carrots in small amount of water for 20 minutes or until tender. Drain well.
  2. Combine next 5 ingredients in a small saucepan; cook over low heat, stirring constantly, about 5 minutes or until thickened.
  3. Add butter, stirring well. Pour over carrots; stir gently to coat well.
