Sunset Cucumber Soup

Ingredients

  • 2-3/4 large cucumbers, peeled, seeded and diced
  • 1-1/4 lbs. jar pickled beets, drained, juice reserved
  • 2/3 cup onions, chopped
  • 2 Tbs. plus 2 tsp. parsley
  • 4 cups chicken stock
  • 1-1/4 tsp. sugar
  • 2/3 cup nonfat sour cream
  1. Blend all ingredients in a blender, adding some beet juice if mixture is too thick.
  2. Make at least one day ahead for best flavor.
  3. Refrigerate and serve cold.
