Stuffed Spud Soup

Ingredients

  • 2 lbs frozen hash browns (thawed)
  • 1 stick butter
  • 1 can cream of chicken soup
  • salt and pepper to taste
  • 3-4 cups half & half (or milk)
  • 1 cup shredded cheddar cheese
  • parsley flakes or chopped chives for garnish
  1. Saute onion in butter. Add soup, half n half, and thawed potatoes
  2. Stir in cheese and heat gently
  3. Garnish and serve
