Strawberry Kiwi Spinach Salad
A perfect light lunch or appetizer, this salad is colorful and delicious!
1/2 cup white vinegar
2 Strawberry Kiwi tea bags
3/4 cup olive oil
1/2 tsp. sugar
4 cups fresh spinach, rinsed and dried
1/2 cup strawberries, rinsed and sliced
1/2 cup kiwi fruit, peeled and sliced
1/4 cup almond slivers
Pour vinegar into a jar (with a tight fitting lid) and place the Strawberry Kiwi tea bags in the vinegar. Let steep until red, about 20 minutes. Remove and gently squeeze remaining flavor from tea bags before discarding. Add olive oil and sugar, then shake vigorously. Place all your remaining salad ingredients in a large bowl and pour the vinaigrette over all, toss and serve.
