Sprout and Sliced Tomato Salad
Tasty sprouts and herbs adorn perfect summer tomatoes in this eye-catching salad. It would also be yummy with some blue cheese crumbled on top.
3 tomatoes, cored and sliced
a container of sprouts such as alfalfa, radish, onion or a mixture
¼ cup chopped fresh herbs such as cilantro, basil and/or mint
2 tablespoons lime juice
2 tablespoons olive oil
Arrange the tomato slices overlapping, in a circle on a platter. Scatter the sprouts on top with the herbs. Drizzle the salad with the lime juice and oil and sprinkle with salt and pepper.
Serves 6 to 8
