Split Pea Sausage Soup

Ingredients

  • 1 lb smoked kielbasa
  • 1 lb dry split peas
  • 6 cups water
  • 1 cup chopped carrots
  • 1 cup chopped onions
  • 1 cup chopped celery
  • 1 tab minced fresh parsley
  • 1 teas salt
  • 1/2 teas coarse black pepper
  • 2 bay leaves
  1. Cut sausage in half lengthwise and cut into 1/4″ pieces
  2. Place in a dutch oven or kettle and add remaining ingredients. Bring to a boil
  3. Reduce heat and simmer for 1-1/4 to 1-1/2 hours or till peas are tender
  4. Remove bay leaves
