Spinach Salad with Blue Cheese and Plum Dressing
5 cups fresh small spinach leaves, washed and spun dry
1 ripe plum
1/3 cup vegetable oil
3 tablespoons red wine vinegar
¼ cup crumbled blue or goat cheese
Put spinach in a salad bowl.
Wash and pit the plum. Put it in a blender and add the oil, and vinegar. Blend the dressing until smooth and season with salt and pepper.
Sprinkle the spinach with the cheese and drizzle with the dressing to taste. Left over dressing can be kept covered and refrigerated for 1 week.
Makes about 1 cup dressing
