Spinach Pierogi Pizza

Ingredients

  • 1 (10 oz.) can refrigerated pizza crust
  • 1 (9 oz) pkg. frozen spinach, thawed, squeezed to drain
  • 1/2 c chopped onion
  • 2 T butter
  • 1-1/2 cup mashed potatoes
  • 2 T oil
  • 1/2 t garlic salt
  • 4 oz shredded mozzarella cheese
  • 2 oz shredded Cheddar cheese
  • 1 small onion, sliced, separated into rings
  1. Grease 13 X 9″ pan
  2. Starting at center, press out unrolled dough with hands
  3. Bake 425° for 7-9 minutes or until light brown
  4. Meanwhile, in large skillet, cook spinach and onion in butter until onion is crisp-tender. Stir in potatoes; mix well
  5. In small bowl, combine oil and garlic salt; mix well
  6. Brush over partially baked crust, top with spinach mixture. Sprinkle with mozzarella cheese and then Cheddar cheese. Top with onion rings
  7. Bake 425° for 15-20 mins. until cheese is melted and edges of crust are golden brown
