Spiced Apricot and Apple Soup


• 2/3 cup dried apricots, soaked overnight, or no-need-to-soak dried apricots
• 1 lb eating apples, peeled, cored & chopped
• 1 small onion, chopped
• 1 Tbsp lemon or lim juice
• 3 cups chicken stock
• 2/3 cup dry white wine
• 1/4 tsp ground ginger
• good pinch allspice
• salt and pepper

To Garnish:

• 4-6 Tbsp sour cream or plain yogurt
• little ground ginger or ground allspice

  1. Drain the apricots, if necessary, and chop. Put the apricots in a saucepan and add the apples, onion, lemon or lime juice and stock. Stir to mix together
  2. Bring to a boil, then cover and simmer for about 20 minutes until all the fruit is soft and broken down
  3. Leave the soup to cool a little, then press it through a strainer or blend in a food processor until smooth. Pour the soup into a clean pan. Add the wine and spices and season to taste. Bring back to a boil, then leave to cool. If too thick, add a little more stock or water and then chill thoroughly
  4. To serve, put a spoonful of sour cream or yogurt on top of each portion and lightly dust with ginger or allspice
