Sour Cream Lemon Pie

Ingredients

  • 1 cup sugar
  • 1/4 cup cornstarch
  • 2 tbsp butter or margarine
  • 1/4 cup lemon juice
  • 1 tbsp grated lemon rind
  • 1 cup milk
  • 1 egg beaten
  • 1 cup sour cream
  • 1 baked 9″ pie shell
  • whipped cream
  1. In heavy saucepan, mix sugar and cornstarch. Add butter, lemon juice, lemon rind and milk. Heat and stir over medium heat until it boils and thickens.
  2. Stir about 1/4 cup mixture into egg then stir egg mixture back into saucepan. Stir and return to a boil. Remove from heat. Cool. Add sour cream. Stir and pour into pie shell. Chill.
  3. Cover pie with whipped cream.
