10 Eggs

1/2 Cup all-purpose flour, sifted

1 teaspoon baking powder

1 teaspoon salt

2 cups small curd cottage cheese

1 lb. Monterey Jack cheese, grated

1/2 Cup melted butter

1 Can diced mild green chiles (7oz can)

1/2 Cup Salsa de Lorenzo


Preheat the oven to 350 degrees. Butter a 9 x 13 inch baking dish. Crack the eggs into a large bowl and beat thoroughly with a whisk. Stir together flour, baking powder and salt, sift them over the eggs and beat until blended. Beat in cottage cheese, grated Monterey Jack cheese, butter and chiles. Pour the mixture into the prepard pan and bake for 35 to 45 minutes, or until puffy and set, and a knife inserted comes out clean. Top each serving with 1 tablespoon of Salsa de Lorenzo. Serve extra salsa at the table. Serves 10.
