One bite of these bars cookies, and childhood fireside memories will come back in a hurry. The original Girl Scout treat, a toasted marshmallow sandwiched with graham crackers and a chocolate bar, has become an American classic. Here the chocolate and marshmallows sit atop a graham cracker blondie, to be enjoyed any time of year, with or without a campfire.
1 stick (1/2 cup) butter
3/4 cup firmly packed brown sugar
3/4 cup granulated sugar
3/4 teaspoon salt
2 large eggs
1-1/4 cups graham cracker crumbs
1 cup all-purpose flour
1 teaspoon Clabber Girl Baking Powder
1-1/2 cups milk chocolate chips
4 cups miniature marshmallows
Butter and flour a 9-by-13-inch all-aluminum baking pan (such as Doughmakers). Preheat the oven to 375’F.
Melt the butter in a large saucepan. Stir in the sugars and salt until smooth. Stir in the eggs, until thoroughly combined. Add the graham cracker crumbs, flour and baking powder and combine well.
Spread the batter in the pan and bake for 20 minutes or until a tester comes out clean.
While the crust is still hot, sprinkle the chocolate chips on top. When melted spread the chocolate evenly over the top and sprinkle with the marshmallows.
Preheat the broiler with a rack set in the middle of the oven. Broil the S’mores for 2 minutes, turning the pan to brown them evenly, until the marshmallows are golden and puffed. Let the s’mores cool completely before slicing.
Makes about 24 2-inch squares
