Skillet Buttermilk Biscuits
2 cups all-purpose flour
4 teaspoons Clabber Girl Baking Powder
1/4 teaspoon salt
Pinch of salt
1/4 cup butter
1 cup buttermilk
2 tablespoons butter
2 tablespoons butter, melted
Stir together first four ingredients in large bowl. Cut 1/4 cup butter into mixture with pastry cutter until crumbly. Add buttermilk and stir just until dry ingredients are moistened. Turn dough onto lightly floured surface. Pat to 1/2 inch thickness. Cut with 2-1/2 inch round cutter. Place 2 tablespoons butter in 10-1/2 inch cast iron skillet. Place in 350 degree oven for 5 minutes until butter melts. Remove from oven and add biscuits.
Bake at 350 degrees for 20 minutes, or until golden. Brush hot biscuits with melted butter. Yield: 1 dozen
