Royal Icing recipe
Use royal icing and Flower Nail No. 9 to make the following: 30 tip 103 roses with tip 10 bases; 40 tip 103 wild roses with tip 2 dot centers; 50 tip 101 forget-me nots with tip 1 dot centers. Make extras to allow for breakage and let dry (wild roses and forget-me nots should be dried on flower formers).

Ice 2-layer cakes smooth and prepare for pillar and stacked construction. Divide all cakes into 8ths.

For 6 in. Cake: Pipe 2 rows of tip 4 strings around bottom edge of cake. Position 2 rows of 6 mm pearl beading and 1 row 4 mm pearls over strings. Drape 4 mm pearl beading 1 in. deep between top division marks. Pip tip 2 strings below beading and add tip 1 dots.

For 10 in. Cake: Pipe tip 32 bottom shell border; edge with 4 mm pearl beading. Add tip 2 drop strings 1 in. deep at division marks. Position 4 mm pearl beading below strings; add tip 2 drop strings below pearl beading. Pipe tip 4 zigzag swags. Pipe tip 4 bead swag with tip 4 bead heart in center. Pipe tip 32 shell top border. Position flowers and leaves at garland points.

For 14 in. Cake: Pipe tip 18 shell top border. At each division mark, pipe tip 4 double drop strings on each side of tip 4 double drop strings on each side of tip 4 quadruple drop strings. Position 6 mm pearl beading 2 1/2 in. down from top border. Pipe tip 1A band bottom border and cover with 3 rows of 6 mm pearl beading. Position flowers and leaves at bottom border.

Position bowl upside down on to and attach flowers and leaves with icing.

Serves 130

*Remove pearls before cutting and serving.
